Creativity without limits - Adanks Biofarm

At the north-westernmost end of Graubünden, between the Ober- and Unter-wingert of the Bündner Herrschaft, biodynamic agriculture lives and thrives at the foot of the Fläscherberg. What already sounds idyllic is reflected in the diversity and harmony with nature. The biodynamic agriculture (Demeter) of Adanks Biofarm focuses on the interaction between humans, animals, plants and the earth – a convincing principle that requires a great deal of courage and creativity in today’s economically oriented world. A circular economy that is considered the most holistic form of agriculture. The two characteristics of courage and creativity also play directly together here, because creative ideas need courage to put them into practice and it takes patience to believe in the result and keep working on it even after the odd setback.

 

Jürg Adank explains the diversity: “Depending on the season, saffron, mustard, corn, garlic and potatoes grow side by side here. At the same time, highland cattle and roosters grow up on the farm or the alp”. One should lead to the other, with as little external influence as possible. But just last night, the newly reared hens were visited by the fox…Manuel Zünd, head chef at atelier VERT, is passionate about saffron, mustard and corn. The climate of the Bündner Herrschaft region, together with the foehn wind in autumn, not only creates a locational advantage for the vines, but is also ideal for the saffron, as this is when the harvest time begins with a lot of manual work. Jürg Adank’s ideas go far beyond the planning of long-term cultivation, as he also produces other products such as gin, pasta and honey. Incidentally, everything is also available to buy in the farm store.

 

The mustard can be seen from afar with its yellow flowers and tall growth. Towards summer, small grains grow under the flowers, which are dried in the sun in late summer after threshing. The starting point for mustard production or the creation of saffron mustard. Mustard, saffron and whole grain corn can now also be found on the menu at atelier VERT, grown biodynamically.
